If you’re in the mood for an intense and fierce taste, then we recommend chicken livers. Pleasantly woody and earthy, a little metallic too, slightly sweet depending on the size of the bird. Chicken liver is high in protein and contains plenty of folate, high in vitamins A & B too, making it the healthiest organ meat there is. Simply sauté with onions and season to your liking, we like ours with fresh thinly sliced garlic too. For a saucy version, make a creamy mushroom sauce - great with pasta.
